Ety.  uncertain.  References the early American practice of storing pork in a barrel of brine, which was often a family’s major food resource through certain seasons.  Pork barrel politics adds language to a piece of legislation that doles out chunks of “pork” to specific regions or constituencies, in order to win the vote of the associated legislator.
